The picture of the delicious cuisine that brought you onto this post is called Lechón Cusqueño. Served up high in the Andes, this traditional slow roasted baby pig is sensory overload in the best way possible! It’s usually served on a bed of native aromatic herbs with incredible local sides like a fluffy corn tamal (humita) and a baked potato lasagna cake called Pastel de Papa. I had this the very first time I visited Cusco! Mentally, my brain skipped the stress but unfortunately my stomach did not get the memo while dealing with that high altitude. Have you heard of the coca leaf tea? Mate de coco. Not only helpful for altitude sickness but helps aid digestion too so don’t skip it! Mint tea is also another! I got y’alls…I have the tea 😉 fear not, you will be able to find it everywhere you go. The sellers know what they’re doing haha!
